Sourdough Blueberry Muffins

I‘ve always loved to bake but learning how to bake with sourdough has been so much. These muffins are DELICIOUS and so easy to make! You’ll never want another kind of blueberry muffin again!

INGREDIENTS

2 Cups all purpose flour

1/2 tsp salt

1 tsp cinnamon

2 tsp baking powder

1/2 tsp baking soda

1 stick unsalted butter, melted

1 cup sugar

1 tsp vanilla extract

1/2 cup sourdough starter discard

2 eggs

1 cup blueberries, frozen or fresh

INSTRUCTIONS

  1. Preheat oven to 350F

  2. In a medium bowl, mix together flour, salt, cinnamon, baking powder & baking soda

  3. In a large bowl or kitchen aid mixer, mix melted butter, sugar, vanilla and sourdough starter discard

  4. Individually add in the eggs

  5. Gradually add dry ingredients to the wet ingredients and mix until combined

  6. Fold in the blueberries

  7. Grease or line muffin tray

  8. For standard sized muffins, bake 10-12 minutes and for large sized muffins, bake 18-20 minutes

ENJOY! You can switch blueberries for anything else, like chocolate chips.
