Vanilla Hot Chocolate Cookies

I made these cookies during Christmas and they were a hit! I was able to sell them to my community and loved having my baked goods in the homes of others during the holidays. A true labor of love and I adored every second of it!

I’m not going to lie, these cookies took some time but were SO worth it! Let’s get into it:

Ingredients:

  • 6 tbsp salted butter

  • 1 1/2 cups semi-sweet chocolate chips

  • 3 eggs, room temperature

  • 1/2 cup granulated sugar

  • 2 tbsp vanilla extract

  • 1/2 cup + 2 tbsp all-purpose flour

  • 2 tbsp unsweetened cocoa powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 6 ounces semi-sweet chocolate chips, chopped

  • Flakey sea salt for topping

Instructions:

  1. Preheat oven to 350F

  2. melt butter & chocolate chips together in the microwave

  3. In a mixing bowl, whisk eggs & sugar together for 2 minutes. Add in vanilla extract & melted chocolate, mix until it looks glossy. Mix in flour, cocoa powder, baking soda & salt until just combined. Don’t over-mix.

  4. Fold in chopped chocolate chips.

  5. Put the bowl in the freezer for 30 minutes.

  6. On a small baking sheet, using a 1/4 cup measuring cup or cookie scoop, scoop the dough into balls and place on small sheet. Freeze for 15-30 minutes, until firm.

  7. Place 2 inches apart on 2 parchment lined baking sheets. Bake for 8-12 minutes. Sprinkle with sea salt.

  8. Enjoy!
