Vanilla Hot Chocolate Cookies
I made these cookies during Christmas and they were a hit! I was able to sell them to my community and loved having my baked goods in the homes of others during the holidays. A true labor of love and I adored every second of it!
I’m not going to lie, these cookies took some time but were SO worth it! Let’s get into it:
Ingredients:
6 tbsp salted butter
1 1/2 cups semi-sweet chocolate chips
3 eggs, room temperature
1/2 cup granulated sugar
2 tbsp vanilla extract
1/2 cup + 2 tbsp all-purpose flour
2 tbsp unsweetened cocoa powder
1/2 tsp baking soda
1/2 tsp salt
6 ounces semi-sweet chocolate chips, chopped
Flakey sea salt for topping
Instructions:
Preheat oven to 350F
melt butter & chocolate chips together in the microwave
In a mixing bowl, whisk eggs & sugar together for 2 minutes. Add in vanilla extract & melted chocolate, mix until it looks glossy. Mix in flour, cocoa powder, baking soda & salt until just combined. Don’t over-mix.
Fold in chopped chocolate chips.
Put the bowl in the freezer for 30 minutes.
On a small baking sheet, using a 1/4 cup measuring cup or cookie scoop, scoop the dough into balls and place on small sheet. Freeze for 15-30 minutes, until firm.
Place 2 inches apart on 2 parchment lined baking sheets. Bake for 8-12 minutes. Sprinkle with sea salt.
